Another year of Salsa making behind us. We ended up with 147 pints of corn and bean salsa this year. We may even have enough to do another round later on this fall--we'll see if we feel like doing more or not!
I had quite a few frozen tomatoes and peppers from last year to add to the pot. We may have had around 40 quarts of just tomatoes--cooked down so they aren't so watery.

O.K....I was GOING to tell you that you should post a picture of your canning shelves BEFORE you put all this years on it!! You had a ton of filled jars last year, I can't amagine using all that!! :*)
We didn't get all those jars emptied--but we did only have about six jars of salsa left! We still have plenty of soup and juice left--so maybe we will make more salsa!
